- 1 Whole Arrow J Beef 7 Bone Chuck Roast
- 2 Tablespoons Olive Oil
- 6 Whole Carrots
- 2 Whole Onions
- Salt to taste
- 1 C. Red Wine (optional, you can use beef broth)
- 2—3 C. Beef Stock (Arrow J Beef Broth is the best!)
- 2 sprigs Fresh Thyme (optional)
- 2 sprigs Fresh Rosemary (optional)
- Generously salt and pepper your chuck roast
- Heat olive oil in a large pan over medium-high heat.
- Cut onions in half and carrots into 2” slices.
- Brown onions in heated pan. Remove and put in slow cooker. Add carrots to the pan, toss and slightly brown…about a minute or so. Remove from pan and add slow cooker.
- If necessary, add a bit more oil to the pan. Place the meat in the pan an sear it for about a minute on all sides until its nice and brown all over. Remove from pan and add to slow cooker.
- With the pan still hot, use wine or broth to deglaze the pan, scraping the bottom with a whisk to get all that wonderful flavor up. Pour broth and bits into slow cooker.
- Add enough beef stock to slow cooker to cover the mat halfway (about 2-3 cups). Add the Thyme and Rosemary sprigs.
- Cook on low for approx. 7 hours. Enjoy!!!
